MACADAMIA and WHITE CHOCOLATE MUFFINS
2 cups – Plain flour
3 tsp – Baking powder
1 cup – Sugar
½ cup – Chopped macadamia nuts
¾ cup – Chopped white chocolate
100 gm – Butter
1 cup – Milk
1 Large egg
2 tsp – Vanilla essence
● Measure flour, baking powder and sugar into a large bowl
● Add chopped nuts and chocolate, mix well with a fork to combine
● Melt butter, add to milk, egg and vanilla. Beat with a fork until thoroughly combined
● Pour liquid into flour mixture, gently fold until flour is moistened DO NOT OVER MIX
● Spoon batter into greased muffin pan
● Bake @ 200°C approximately 12 minutes for small muffins or 25 minutes for Texas muffins, until golden brown and firm when pressed in centre
● Leave to cool in muffin pan for approximately 10 minutes, run a clean knife around each muffin to loosen (chocolate sometimes sticks if you haven’t used the paper cups) then put on rack to finish cooling.

MACADAMIA & CINNAMON BAKLAVA
1 cup – toasted, finely chopped
½ tsp – mixed spice
chopped macadamia nuts
12 sheets filo pastry
1/3 cup – castor sugar
150 gm – butter, melted
1 tsp – ground cinnamon
● Preheat oven to 180C. Grease an 18cm x 28cm slice pan
● Combine macadamias, sugar, cinnamon and spice in a small bowl
● Working quickly, layer three pastry sheets together, brushing each with butter
● Fold layered sheets in half widthways and press into a pan to fit
● Sprinkle 1/3 of nut mixture over pastry, repeat layers twice, finishing with pastry, trim excess pastry
● Score baklava into three lengthways, then into five widthways, score each square in half diagonally
● Brush with remaining butter
● Bake for 25-30 minutes or until golden
CINNAMON SYRUP
1 cup – castor sugar
2/3 cup – water
1 cinnamon stick
1 tsp – finely grated lemon rind
● Stir ingredients in a small saucepan over a low heat, without boiling, until sugar dissolves
● Simmer, without stirring, for 6-7 minutes or until syrupy.
● Pour warm cinnamon syrup over hot baklava
● Cool before serving
